Burrata with lentils in balsamic vinegar
A trio of typically Italian delicacies: tender burrata, cooked lentils flavored with balsamic vinegar and salami. A great appetizer. try also this chocolate cake without flour recipe too.
Ingredients
Appetizer For 4 people
½ onion
200 g of brown lentils
6 tablespoons of olive oil
3 dl of vegetable broth
salt
pepper
8 tablespoons of aged balsamic vinegar
1 burrata of approx. 150 g (see tip)
fleur de sel to sprinkle
80 g of salami a piece

Chop the onion and add it to the broth with the lentils and half of the oil. Bring to a boil and simmer over medium heat for approx. 30 minutes. Season with salt and pepper. Let it cool down. If there is still cooking liquid left, drain it.
Before serving, flavor the lentils with the addition of a little vinegar. Remove the burrata from the package and with a sharp knife cut it into four parts. Arrange the pieces of burrata on the lentils. Season with the remaining olive oil and vinegar and sprinkle with fleur de sel. Slice the salami and serve with the lentils.
Useful tips
Burrata is a fresh stretched curd cheese, similar to mozzarella but with a much softer and more stringy texture. Cut it only when serving so that the biting heart does not come out too much. You may be interested to read moroccan lentil salad recipe/ pancakes gluten free recipe.
